If there is one thing I cannot stand about fitness bloggers, it’s the unrealistic standards they promote. This time, I'm not talking about the workouts or the Fitspo or the flawless Gymshark sets at the gym. I'm talking about unrealistic meal prep standards. I mean seriously, where are these people who have 35 matching sets of Tupperware so they can make perfectly portioned breakfast, lunches and dinners for the entire week? Literally the only way that is happening for me is if I go to Walmart every Sunday to buy new Tupperware every week. Where do all my lids go? That's what I want know. Actually, you know what I really want to know? How are these perfect people meal ... read more

Simple Meal Prep Chicken Curry
As I sit to write this, I am very hot and sweaty. I just got done cooking and our house is HAWT. Our air conditioning is broken and anytime I turn that stove on to cook, it makes the house completely unbearable. But I was craving curry today out of nowhere today and was set on making this curry chicken today, even if it meant turning my house into a fiery inferno. You know it's hot in your house when your coconut oil looks like this. All complaining aside, this is one of my favorite go-to meal prep recipes. The problem I have with meal prepping chicken is that after about day two I don't want to eat it anymore because it starts to taste "chicken-y" to me. When I meal prep chicken, I ... read more
My Journey to Star Wars: Galaxy’s Edge
During our quick trip to Disney last November, one of the things we were most excited to see was Star War's Galaxy's Edge. My husband and I are (Donald Trump voice) HUUUUGE theme park nerds. We love Universal Studios in particular, largely because of the immersive-ness of the Wizarding World of Harry Potter. Once we found out about Star War's Galaxy's Edge, we were looking forward to experiencing that "immersive" type of theme-parking in a whole new way. Let me get something out of the way: I'm not a Star Wars fan-girl by any means. If I'm being honest with you, I don't really get it. 🤭 I know a lot of people live and die by the light saber, but I've tried to watch the movies and ... read more
Wildin’ at Animal Kingdom
The current stay-at-home order has the whole country on lock down for almost a month now, and I’m sure many people are reaching the point of getting stir-crazy. We’ve honestly be doing pretty well at our house; taking walks & staying active with at home workouts has helped break up the monotony of being at home. But it hasn’t stopped us from dreaming about our next vacation! I was looking back on the trips we took last year and realized that now would be a perfect time to actually do a write up on all of them. If I can’t travel now, I’ll travel vicariously through pictures of my old trips! Lately I’ve been reflecting on the impromptu trip we took to Disney World in November ... read more
Pellet Grill “3/2/1” Ribs
We're going on day 25 of quarantine and the husband and I have been trying to make the most of our time. We're on our second week of the Insanity workout program (DIG. DEEPER!), we're making our way through the New Testament, and our house is being kept nice and clean. I've done some blogging, lots of baking, and been keeping in touch with family more than usual. I have to say, I'm proud of how we're doing! But trust me, there were plenty of days - especially in the beginning - were we lounged around all day and ate way too many stress snacks. One day we finished off an entire deep-dish pizza and drank a crap-ton of margaritas....it's all about balance, right? The key to not losing our ... read more
How to Make Cold Brew Coffee at Home
Once upon a time I used to spend a ridiculous amount of money on coffee. I’d be that person that goes to a coffee shop almost every day for my specialty coffee and not think twice about it. I would order whatever I fancied - whether it was a fresh pour-over or a refreshing cold brew, pay the nice barista my 5 bucks and be on my merry little way. I would skip into the sunset as I sipped my overpriced bean juice, blissfully unware of my bleeding finances. Then I got married. Seemingly out of no where, this small Puerto Rican man showed up and started getting involved with e v e r y t h i n g. Eventually, he made his way into my bank account and did not like what he saw. He looked ... read more
